How to make fluffy pancakes

If you want really fluffy pancakes, you need to find the right thickness. When they are too thick, you will need either to overcook the outside to get the inside done or they will be under cooked. So getting the right batter is the A and O for delicious pancakes. Test your batter with a spoon and see if it is running thick but slow and nicely off it. Get it as smooth as possible to get a better result.



Ingredients

1 cup of all purpose flour

2 ½ tablespoons of white or brown sugar

2 teaspoons of baking powder

½ teaspoon salt

1 egg

1 cup of milk (don’t use the light version)

½ teaspoon of vanilla essence

4 teaspoons of vegetable oil

Butter for frying and serving

Maple Syrup for serving


Step 1

Mix flour, sugar baking powder, salt together in a big bowl. Make a well in the center of the mixture. Whisk vanilla, milk and eggs together and pour it into the mixture. Mix it until everything is smooth. A few lumps are ok, but try to get the batter as smooth as possible.


Step 2

Heat up a non-stick frying pan over medium heat. Oil it lightly with cooking oil or use butter. Use about ¼ cup of batter per pancake. Cook until you will bubbles appearing at the surface, which should take about 2 minutes. Look for the color and check if the other side has turned brown with.
